How to make

Oven - 360°F (180°C); flat tray covered with baking paper.

In a bowl with a mixer, beat the butter into a fluffy cream and add the sugar. Add the yolk, lime peel and vanilla.

Sift the flour with the baking powder and salt. Add them to the butter mixture and knead a soft dough. It is rolled out onto a floured surface with a thickness of about 0.25″ (6 mm).

Sprinkle with lavender on top. Press with a rolling pin, so that they stick to the dough.

The desired molds are used to cut the biscuits. The heart shape is the most suitable.

The biscuits are arranged in the tray on the paper.

Bake at 360°F (180°C) for exactly 8 minutes. The biscuits should remain pale and slightly darker at the ends.

Leave them in the tray to cool for about 10 minutes and then remove them once they have completely cooled.

The Lavender Biscuits are ready.

Note: The dough is very crumbly and if it cannot be collected, it is left in the refrigerator for about 15 minutes and if after that time it still cannot form well in a circle, 1/2 tsp. of icy water is added and it is kneaded with your hands for a short time. The dough will become soft and elastic and easy to roll out.
