How to make
Oven - 360°F (180°C); Cake tin with ring - 10″ (26 cm).
Peel the apples and cut them into about 3mm thick slices. Sprinkle them with the juice of half a lemon, cinnamon and starch. Toss them in the bowl, so that you don't mash them with a spoon. They are set aside.
In a bowl combine the flour, baking powder and salt.
Beat the butter and sugar with a mixer, until a white mixture is obtained. Add the yolks one by one, then the cream, vanilla and lemon peel. Beat, until a fluffy mixture is obtained.
The flour mixture is added to the butter in three portions with continuous beating. The dough is heavy.
Pour the mixture into the greased cake tin, smooth it out and pour the apples on top, by lightly arranging the top layer.
The apple pie is baked at 360°F (180°C) for about 30-35 minutes.
EGG WHITE MERINGUE:
Beat the egg whites with a mixer and add the sugar in portions. Beat into a fluffy and heavy mixture. The egg whites should not fall from the stirrers.
Remove the hot pie from the oven and pour the meringue over it. With the back of a spoon, shape it as you like. Put it back in the hot oven only with the upper resistor wire on and bake it for about 3 to 5 minutes. You must be careful not to burn it, but to make it pleasantly brownish.
Cool it completely and cut into pieces.
The Apple Pie with Egg White Meringue Topping is very tasty.
Note: This pie can be made with any kind of fruit, apricots, peaches, pears, depending on the season. Apples have a wonderful structure, but if you like them even softer, you can put them on a heated hob with a little butter, sugar and cinnamon to make a cream.
I prefer them this way, in order to feel their crunchy structure. Gorgeous summer pie and a cup of nice coffee.
