How to make
Combine the mustard and pesto along with the fat, black pepper and mix well. Spread the fillets with the resulting mixture on both sides and leave them. It is best to marinate them for at least 2-3 hours.
Seal the pork chops in a very hot grill-pan for about 3-4 minutes on each side. Arrange them in a tray and place a few pieces of dried tomato and oregano leaves on each.
Arrange the mozzarella, cut into thin slices, on top.
Bake the steaks in a high heated oven for about 15 minutes, until the mozzarella is slightly golden and melted.
Both stove and oven cooking times may vary depending on the thickness of the fillets, but the times should match if you are using thinly sliced meat.
Serving idea - fresh salad and dry white wine.
