How to make
Finely chop the onion, garlic and carrot. Fry them in a little oil.
Coarsely chop the peppers and the peeled potatoes and add them to the fried vegetables.
Add the tomato juice and 2 cups of warm water.
If necessary, you can increase the amount of water or replace it with vegetable broth. After the potatoes are cooked, season with the spices.
Be careful with the amounts of coriander and nutmeg as they have strong flavors.
Puree the soup and serve it with a little white cheese, coarsely chopped parsley and if desired, a spoonful of sour cream.
You can replace it with cooking cream, which you add immediately after pureeing the vegetable soup.
