"With so many fresh red peppers on the market, you just have to prepare at least a few jars of Boiled Red Pepper Pickle!"

Ingredients

  • peppers - 11 lb (5 kg), red
  • wine vinegar - 8 1/3 cups (2 liters)
  • wine - 4 1/5 cups (1 liter), on tap
  • water - 4 1/5 cups (1 liter)
  • salt - 2 cups
  • sugar - 3 - 4 tablespoons (optional)
  • oil - 2 cups
  • mustard seeds - 1 - 2 tablespoons

How to make

Wash the peppers well and remove their seeds. Boil the wine, vinegar, water, salt, sugar and oil in a pot. Put several peppers in the boiling mixture. After 2-3 minutes, remove them and put the next ones in.

Once the peppers cool, put them in jars, optionally add some cleaned garlic cloves. Bring the brine to a boil again and top up the jars, and add some mustard seeds.

Press the tops down with 2 crossed vine twigs each. Close the jars tightly and store them in a cool place. After 18 days, this pickle will be ready for consumption.
