  • strawberries - 2.2 lb (1 kg) medium - sized
  • sugar - 5.5 lb (2.5 kg)
  • cold water - 4/5 cup (200 ml)
  • lemon - 2 pcs.
  • citric acid - 2 tsp.
  • baking soda - 3 pinches

How to make

Wash the strawberries very well.

Carefully remove the stalks, by being careful not to tear the fruit.

Squeeze the lemons, by pouring the lemon juice into a small bowl.

Each strawberry, after being cleaned from the stems, is dipped in lemon juice, then placed in a deep pot in which they will boil.

Once the strawberries are arranged in the pot, pour the sugar on top.

Leave them for 12 hours.

After the strawberries have been left long enough, add cold water into the pot.

Boil over low heat, by stirring gently at the bottom of the pot, so that the sugar doesn't burn.

Once the sugar has melted and the syrup has boiled, add the soda, by being careful not to overboil and overflow the pot. It should be boiled in a deep pot.

The foam is periodically removed with a slotted spoon.

Once the jam has thickened enough, add the citric acid and mix very well.

Boil the homemade strawberry jam for 10 minutes and remove it from the heat.

Leave the jam in the pot to cool for 24 hours, then pour it into jars.
