How to make
The spelt flour is sifted twice into the bowl in which it will be kneaded. Leave the butter at room temperature to soften.
Beat the egg yolks, until a frothy mixture is obtained. Mix the softened butter with the egg yolks with a mixer on high speed.
Gradually add the brown sugar while continuously stirring.
The butter cream is added to the flour. Knead a soft buttery dough.
The dough is left for 1 hour in the refrigerator and it is covered with foil for fresh storage.
After removing it from the refrigerator, the dough is divided into three parts.
Each part is rolled out into a thin crust.
Shapes are cut out, half being circles without a hole, the other half being circles with a hole in the middle.
The cut out homemade cookies are placed in a tray onto baking paper.
Bake them for 12 minutes at 320°F (160°C), then remove from the tray and leave them to cool.
After they have cooled, stick one cookie without a hole on top of a cookie with a hole, smeared with strawberry jam.
The cookies are arranged on a tray and sprinkled with powdered sugar.
