How to make
In a pot, stew the onion in the butter along with the black pepper and parsley.
The mussels, which have been previously cleaned, are added to the other products and stewed briefly.
Add water and cook covered until the shells open up. Strain the broth and make a thick sauce with two spoons of flour and butter.
The boiled mussels are removed from the shells and are cleaned. Pour the prepared sauce over them and leave them in a warm place.
Mix the milk with the separated yolk and pour over the mussels, which should not be on the stove. Add parsley, lemon juice and mix.
Serve with a glass of cold white wine.
