Ingredients

  • olive oil - 2 tbsp.
  • sausage - 1.1 lb (500 g) raw, rich in taste
  • onion - 1 onion (chopped)
  • carrots - 2 pcs. (diced)
  • celery - 2 stalks (fresh, chopped)
  • thyme - 1 tbsp. (fresh, chopped)
  • garlic - 2 cloves (crushed)
  • beans - 0.9 lb (400 g) boiled
  • vegetable broth - 3 4/5 cups (900 ml)
  • tomatoes - 0.9 lb (400 g) peeled, diced
  • cabbage - 3.5 oz (100 g) chopped, fresh
  • pasta - 2 handfuls (small)
  • parmesan - for sprinkling

How to make

Finely chop the vegetables.

In a frying pan with olive oil stew the sausage (cut into circles), onions, carrots, celery, add thyme and cook for about 3 to 5 minutes.

Transfer everything into a deep pot and add boiled beans, garlic, tomatoes, cabbage and broth.

Leave it to simmer for about 10 minutes, add the small pasta and cook, until the pasta is ready.

The bean soup is served sprinkled with grated Parmesan flakes of your choice and toast.

The Tuscan Soup is very tasty.
