How to make
Clean, wash and freeze the strawberries.
Put the egg whites, a pinch of salt and lemon juice in a dry bowl. Beat well, by making sure the mixer attachments are also completely dry before you start beating.
Add the sugar in portions without stopping the mixer. The amount is according to your taste, as it also depends on the sweetness of the strawberries you have.
The egg white meringue should become thick, dense and with a slight shiny tinge. Blend the frozen strawberries in a blender and add them in portions to the egg whites, by stirring lightly and gently.
Distribute the prepared mixture into cups and put them in the freezer for about 20-30 minutes.
It should not freeze, but only harden slightly. This is a very fresh dessert, very much like mousse / ice cream, but very fluffy, delicate and light.
Serve it with chocolate waffle sticks.
The fresh strawberry meringue is ready.
