Ingredients

  • buckwheat - 75 oz (200 g)
  • water - 19 fl oz (560 ml)
  • cranberries - 1.4 oz (40 g)
  • dates - 3 pcs. (pitted)
  • salt - 1 pinch
  • coconut oil - 0.9 oz (25 g)
  • pear - 2.5 oz (70 g) (peeled and cleaned)
  • olive oil - 1 tbsp. + for greasing

How to make

Buckwheat is grinded into flour in a blender or suitable food processor. Of course, ready-made flour can also be used.

If desired, spelt flour can be added while maintaining the total weight.

Add the dried fruit, fresh pear and coconut oil to the flour.

Grind again at maximum speed, until a homogeneous smooth mixture is obtained.

Pour the water, add a pinch of salt and blend well. The mixture is left to stand for 1 hour.

After this hour, the pancake batter will have thickened. If you decide, you can even pour more water.

And here comes the most peculiar moment - the baking.

Due to the lack of eggs and any soldering ingredient, making these pancakes in the standard way may seem impossible. I personally tried and it was unsuccessful, so I offer you the following method with which you will not have problems:

Grab a sheet of baking paper and cut or tear off a square about the size of the pancakes you want to make.

Grease it well with olive oil and place in a pan over medium heat. When well heated, pour a small ladle of the mixture and spread it out with a silicone spatula.

When the pancake starts to separate at the edges, turn it directly on the pan along with the paper or if it all comes off - without it.

Bake it on the other side, until it aquires a golden brown color.

The pan must be non-stick or lightly greased, although the raw side should have hardened when being turned over and there is no longer a risk of it sticking.

Continue like this, until the buckwheat pancakes mixture runs out.
