Cut each chestnut lightly on top. The chestnuts are then placed in hot water for 10-15 minutes. Then peel them and put them in the milk to boil.
When the chestnuts soften, blend them into a puree with a blender. Add the butter, sugar and broth. Stir well and serve the puree.
