How to make
Boil the cleaned chestnuts in water. As soon as they boil, remove them from the heat and peel off the thin skin, by making sure to leave the chestnuts whole. Then drop them into cold water to cool.
Then put them in boiling water again, to which you must add the lemon juice. When the chestnuts are soft, remove them with a slotted spoon and let them cool. Add 1 kg of the sugar, a little water and the vanilla.
Allow the chestnuts to boil, remove the foam and when the syrup becomes clear, pour it over the cold chestnuts and leave them for 1 day. The next day, strain the syrup and heat it again, add the remaining 7 oz (200 g) of sugar.
Boil until the desired thickness is obtained. Cool the syrup. Arrange the chestnuts in clean jars, pour the syrup over them, close and store for the rest of the winter.
