How to make
Peel, wash and boil the potatoes well.
Wash the spinach well and stew it for 10 minutes in olive oil over low heat, along with the finely chopped spring onions.
Crumble the Tofu cheese.
When the potatoes are well cooked, mash them well. Don't worry if there are small lumps.
Mix the potatoes with the spinach, cheese and as much salt as you like.
Knead the mixture well. You can leave it for 2 hours in the refrigerator to thicken.
Form balls out of the mixture, like ordinary meatballs.
Bake the vegetable patties onto baking paper in a preheated oven at 360°F (180°C), until they aquire a golden color - about 40-55 minutes.
The vegan spinach patties are ready.
