How to make
Wash the quinoa in a strainer under running water. Boil it for 12 minutes and strain it.
Cut the cherry tomatoes in halves. Cut the olives into circles, if they are pitted. If you don't have pitted olives, leave them whole.
In a bowl, mix the warm quinoa with the tomatoes, olives and green beans (they should be tender and round, not flat).
Prepare a dressing for flavoring
Finely chop the fresh mint leaves and mix them with the olive oil, lemon juice, oregano and a pinch of salt.
Mix well and pour it over the quinoa salad and mix the warm green beans and quinoa salad well.
