  • onion - 1/3 cup (chopped)
  • tomatoes - 1 pc. (chopped, well ripened)
  • peppers - 2 pcs. (chopped, green and red)
  • tomato paste - 2 tbsp.
  • olive oil - 2 2/3 tbsp (40 ml)
  • coriander - 1/4 tsp.
  • black pepper - 1 pinch (freshly ground)
  • garlic - 2 cloves (crushed)
  • carrots - optional
  • seasonal vegetables - optional
  • salt - by taste
  • saffron - by taste

How to make

Sofrito is the main sauce, which is the base for many dishes in the Spanish cuisine - from rice and paella, to various stews. The products and quantities for it can vary depending on what dish you will use it for, but the obligatory ones are onions or leeks, tomatoes, peppers, garlic and of course good quality olive oil.

Depending on the season, other vegetables such as carrots, celery stalks, zucchini or eggplant can be added. The spices are also optional or depending on the dish for which the sofrito will be used.

The main rule is to first fry the onion for about 2-3 minutes, then add the peppers and carrots (if any are used), as well as other vegetables, which you have chosen to use. At the end, add chopped or grinded tomato with the tomato paste with garlic for a richer taste.

Add salt, season according to your taste and cook over low heat for about 25-30 minutes, by increasing the heat, if necessary, in order for the sauce to reduce.

The idea is to get a concentrated taste, which will not only serve as a base, but also to enrich the dish.
