How to make
This aromatic cake with melon and spices is perfect for your cup of hot coffee or milk.
It is easy to prepare and very tasty. See for yourself.
Blend the well-ripened and juicy melon in a blender.
Beat the eggs with the coconut sugar and add the blened fruit, oil and dark rum.
Sift the flour, which has been mixed with the spices (in advance) - cinnamon, ginger and nutmeg, as well as a pinch of salt, baking powder and soda, into the liquid mixture.
Stir with a spatula until the dry ingredients are absorbed.
Pour the mixture into a greased and lightly floured cake tin and bake for 40 minutes at 360°F (180°C) in a preheated oven.
Leave the baked fruit cake to cool slightly before removing it from the cake tin.
In a blender or coffee grinder, grind the dried citrus peels with the crystal sugar.
Sprinkle the cake and serve.
You do not need to use all of the citrus sugar, just use as much as you like and use the rest for another dessert.
