How to make
Mix the egg whites, 2 tablespoons of starch, 1/4 tsp ground ginger, 1 teaspoon salt, 1 tsp black pepper for the marinade and stir. Cut the beef into strips approximately 2″ (5 cm) long and 1/2″ (1 cm) thick. Soak them in the marinade for an hour.
Clean the beans, cut them slightly and boil in salted water for 10-15 minutes. Preheat oil in a deep pan and fry the beef for 3 minutes. Remove it and in the same pan, fry the chopped onion and garlic, seasoned with ginger. If the oil too much, remove some from the pan. Add the drained green beans and cook for 3 minutes while stirring.
Pour in the broth, soya sauce and sesame oil. Dissolve the starch in a little water and put it along with the meat in the pan. Mix well and remove from the heat. Serve the Chinese green beans with beef garnished with boiled noodles or rice.
