Ingredients

  • spelt - 3.5 oz (100 g) grains or ground
  • water - 4 cups (1 liter)
  • salt - 1 pinch
  • cinnamon - 1 pinch (optional)
  • vanilla - 1 pinch or 1/2 pod (optional)

How to make

The water is boiled and if desired, flavored with cinnamon or vanilla. Leave it to infuse for 5-10 minutes.

Pour the spelt grains, a pinch of salt and transfer it into a blender or other suitable device for fine grinding.

Turn it on at maximum speed for 30 seconds or more, depending on the power of the appliance. You have to grind it well, but if pieces and flakes of the grains remain, it is not a problem.

The spelt drink is left to stand for 10 minutes and then filtered through a fine strainer.

The spelt milk is stored in a refrigerator and it is best to consume it after it has settled for at least two hours.

Optionally you can sweeten it with honey, agave syrup or stevia.

This drink contains all of the useful qualities of the spelt from which it is prepared.

It contributes a lot of of fiber, antioxidants, vitamins, minerals, essential fatty acids, proteins and carbohydrates to our body.

It is extremely suitable for people with developed lactose intolerance, but is not inferior to milk of animal origin. For this reason, it can be consumed on its own or used to make pastries, pitas, pancakes and other products and dishes, in which it replaces animal milk.

The only disadvantage of the drink is that it contains gluten in certain quantities and this fact makes it not suitable for people with gluten intolerance.

* The remnants of spelt after straining the milk are not discarded and they can be used to make delicious vegan burgers, pancakes, biscuits and more.
