How to make
Heat the oil and saute the finely chopped carrots, then add the chopped onion and spinach.
Once the spinach shrinks, add the spelt which you've semi-boiled. Stir well, remove from the heat and add 1 cup cold water.
Separately, crumble or grate the feta cheese and mix with 1 egg and 3 1/3 tbsp (50 ml) milk. Add this mixture in to fry. Place everything in a greased tray and bake in a preheated 430°F (220°C) oven for about 40 minutes - until the liquid has evaporated.
Beat all the ingredients for the topping. Pour this over the moussaka with spelt and bake for about 10 more minutes.
Serve a piece of the spelt moussaka, garnished with yogurt.
