"Here`s a slightly different moussaka, with which to surprise the traditionalists."

Ingredients

  • mince - 17.5 oz (500 g) veal
  • potatoes - 17.5 oz (500 g)
  • carrots - 4 oz (120 g)
  • peppers - 1, red
  • tomatoes - 21 oz (600 g) canned
  • sugar - 1 tablespoon
  • salt - 1 tsp
  • oregano - 1 tsp
  • cumin - 2 pinches
  • onions - 1 head
  • paprika - 1 tsp
  • cayenne pepper - 1 tsp
  • basil - 1 tsp
  • salt
  • black pepper
  • olive oil - 3 tablespoons
  • garlic - 1 clove
  • bay leaf - 1
  • broth - 4/5 cup (200 ml) beef
  • parsley - a few bunches

How to make

There's no topping for this moussaka and no baking, it looks more like a stew with a moussaka flavor.

Wash the vegetables. Dice the potatoes and carrot. Chop the onion and garlic finely, the pepper into pieces.

Heat the olive oil in a large pot on a high stove, add the onions and braise until softened, then tear up the mince and add it. Stir and use a spatula to crumble the mince to pieces. Braise until mince turns a golden color.

Lower stove to medium, add the potatoes and carrots, cook 5 min. Finally add the garlic and pepper, stir, braise for a min. and pour in the tomatoes.

Salt and season to taste with the spices and 1 tbsp sugar. The cayenne pepper is optional for a spicier taste.

Pour in the broth and leave under cover for 30 min. to boil until ready and for the liquid to reduce.

In the meantime, stir so it doesn't stick to the bottom. Finally, remove the bay leaf, sprinkle fresh parsley and serve.
