How to make

Clean the tongue and put it to boil in a pressure cooker. Remove it, peel it and cut it into pieces. Heat half the oil and fry the tongue, until it gets a light crust. Remove it, and melt the other butter and add chopped onion, garlic, bacon and mushrooms.

Season with spices to taste and mix in tomato paste. Pour the tongue in soft. Everything is distributed in a clay pot and put the lid on it, to bake for 30-40 minutes in a heated oven.

Remove lids and sprinkle with grated cheese and optionally, break an egg on top. Bake to a nice tan.
