  • milk - 1 cup
  • mustard - 3 tsp
  • lemon juice - 2 tbsp

How to make

Well-washed tongue is put in the pressure cooker, pour half full of water, add spices and coarsely chopped vegetables. Once boiled, remove the foam, salt, close the lid tightly and cook about 40 minutes.

Remove the tongue, immerse it in cold water and peel it. Pour the sliced tongue with hot broth and keep warm. Melt butter, add flour, stir well and gradually add the milk. Simmer 3-4 minutes.

Put the mustard, salt, pepper and a little very finely chopped tarragon in. Beat the egg yolks with the lemon juice. Stirring constantly, add the hot sauce to the yolks.

Pour the sauce on, or present it in a separate bowl.
