Ingredients

  • puff pastry - 2 sheets
  • baby spinach - 10.6 oz (300 g) chopped
  • ricotta - 3/4 cup (full - fat cheese)
  • feta - 8 oz (230 g) crumbled
  • eggs - 1 pc.
  • dried dill - 1/2 tsp.
  • salt - 1/2 tsp.
  • black pepper - 1/4 tsp.
  • onion - 1 finely chopped onion
  • for greasing
  • yolk - 1 pc. mixed with 2 tbsp. of water

How to make

Start by preparing the spinach filling for the delicious spinach puff pastry roll.

In a large bowl, combine the spinach, feta, ricotta cheese, dill, salt, black pepper and onion. Stir well until the spinach is completely covered with the cheese and all the ingredients are well mixed.

Taste the mixture to see if you're happy with the amount of spices. Add more salt and black pepper, if necessary.

Beat the egg and add it to the spinach mixture. Stir well until the ingredients are well mixed and set it aside.

Lightly sprinkle your work surface with all-purpose flour. Roll out each sheet of puff pastry into a rectangle (12 by 15). Place the puff pastry sheet on a baking tray lined with parchment paper.

Make an even number of diagonal cuts on each side (approximately 0.8″ /2 cm/ from each other) of the rectangular crust.

Divide the spinach filling into 2 parts.

Spread the spinach and cheese mixture in the center of the prepared puff pastry.

Fold the diagonal strips of dough over the filling to form the savory roll.

Press the edges together to seal the top and bottom.

Spread the roll with egg and sprinkle it with sesame seeds, if desired. Place it in the freezer for 15 minutes or the refrigerator for 25 minutes.

Bake the puff pastry in the center of the oven until it's puffy and aquires a golden brown color. About 30-35 minutes.

Allow it to cool completely before serving the spinach savory roll.

Serve it with Tzatziki sauce.
