How to make
Put the minced meat in a bowl, add an egg, the grated onion, the squeezed out from the water and a crumbled slice of bread, season with a pinch of oregano, parsley and black pepper. Knead the minced meat well and leave it in the fridge for 30 minutes, until the ingredients fall in love!
Blanch the spinach in boiling salted water for 3 minutes. Place it into a colander, strain well and cool it.
It's time to knit the garment for the roll. Roll out the two puff pastry circles. Place one on a piece of parchment paper. Cut them into 0.8″ (2 cm) wide strips.
From one roll, lift each even strip almost to the top. Take a strip from the other circle and lay it horizontally. Lower the raised strips and raise the odd ones, re-insert a new strip horizontally and lower the raised ones. Do this, until you knit the whole thing.
I will post step-by-step photos that show the knitting well.
Carefully lift the woven quilt with the paper and find a place for it in the refrigerator for 30-40 minutes. This is a must, otherwise you will not be able to cover the roll!
Roll out the cooled minced meat onto a sheet of baking paper. Cover it with the blanched spinach. Arrange strips of prosciutto on it and sprinkle with small cubes of scamorza. Using the paper roll it into a tight roll.
Carefully cover with the puff pastry. Fold the bottom and both ends well. Place the roll onto baking paper in a large tray.
Beat one yolk with 1 tbsp. of milk and spread the puff pastry. If you follow my baking instructions, you should have no trouble baking the roll well.
Preheat an oven to 390°F (200°C). Place the tray and bake for the first 20 minutes, by carefully keeping an eye on what happens in the oven. As soon as you see that the top is starting to bake, cover it with aluminum foil, reduce the oven to 360°F (180°C) and continue baking for another 20 minutes.
After the time is up, reduce the heat to 320°F (160°C) and continue baking for another 30 minutes. When these 30 minutes have passed, remove the foil, increase the oven to 360°F (180°C) and finish baking this roll for another 15-20 minutes!
Transfer the baked meat roll into a suitable plate, cut it into thick slices and serve it with a side of baked potatoes!
