Ingredients

  • For the cake layers
  • eggs - 6 large pcs.
  • sugar - 1 cup
  • vanilla - 1 tsp. (vanilla extract or essence)
  • chocolate - 4 oz (115 g) dark, melted in a water bath
  • flour - 1 cup (sifted)
  • For the syrup
  • sugar - 1/4 cup
  • water - 1/3 cup
  • liqueur - 2 tbsp. (cherry or another type of rum)
  • For the filling
  • cherries - 1.1 lb (500 g) pitted
  • starch - 1 tbsp.
  • cherry liqueur - 2 tbsp.
  • cream - 1.1 lb (500 g) whipped/sweetened
  • chocolate - 100 g (grated for decoration)

How to make

Beat the eggs, sugar and vanilla on high speed with the mixer until a foamy mixture is obtained.

Melt the chocolate in a water bath and add it to the mixture, while stirring slowly. Add the flour.

Divide the mixture into three parts and bake them in a 9.4″ (24 cm) cake tin lined with baking paper until they're fully baked

Make the syrup by mixing the sugar and water until it boils. Divide it into three for the three cake layers.

Remove it from heat and allow it to cool. Add the liqueur.

Make the filling by putting the cherries, a few spoons of sugar and 1.7 fl oz (50 ml) of water in a small saucepan.

When it boils, remove the cherries and add the starch. Place the cherries back into the thick cream. Whip the cream well and start assembling the cake.

Pour evenly one part of the syrup on the first cake layer, add a little whipped cream, cream, cherries, then another cake layer on top ....

Smear the sides and top with cream.
