How to make
Clean and wash the spinach.
In a deep pot on the stove, boil the water.
Pour the spinach and blanch it for about three minutes.
Take it out immediately and pour cold water over it to stop the cooking. Cut it into small pieces.
In a the cookware, in which you will cook the bulgur, pour olive oil to heat up.
Add the onions and finely chopped carrots and garlic.
Fry them lightly and add the spinach and tomato puree.
Season with salt and olive oil. Finally, add the washed and strained bulgur.
Fry a little more and add water to cover the mixture completely.
Cover it with a lid and once it's boiling, leave it to simmer on low heat for about ten minutes.
Remove it from the heat and transfer the bulgur into a baking pan.
Sprinkle it with chopped parsley and bake it in a preheated oven at 390°F (200 degrees) for twenty minutes.
