Ingredients

  • tagliatelle - 12 oz (350 g)
  • onions - 7 oz (200 g)
  • cooking cream - 1 cup (200 ml)
  • goat cheese - 3.5 oz (100 g)
  • blue cheese - 1 oz (30 g)
  • parmesan powder - 3 tbsp. + for sprinkling
  • mozzarella - 3.5 oz (100 g) grated
  • gouda - 1.7 oz (50 g) grated
  • black pepper - 1 - 2 pinches
  • nutmeg - 1 - 2 pinches
  • salt - by taste
  • olive oil - 0.7 oz (20 g)
  • butter - 0.7 oz (20 g)

How to make

Finely chop the onion and stew it in olive oil and butter for 10 minutes.

Pour the cream, grated cheeses + crumbled goat and blue cheese and Parmesan powder. Stir until they all melt and merge into one.

Season with black pepper, nutmeg and salt and leave the pasta sauce to simmer over low heat, while stirring occasionally, so that it doesn't burn the bottom.

Boil the pasta in salted water according to the instructions on the package (al dente).

When it is ready, transfer it into the cheese sauce, raise the heat a little and with a light tossing movements of the pan (forward and up), mix all of the ingredients well.

Distribute the cooked tagliatelle into portions in deep plates and sprinkle them with Parmesan powder before serving.
