Cut all of the ingredients for the filling. Stew the red onion until it releases its aroma, add the tofu, mushrooms, carrots, spring onions and the red pepper.
Stir, pour a little water and cook until they soften. Add salt, black pepper and as much sugar as you like.
Cook and stir until the mixture for the vegetable croquettes thickens and then set it aside.
Peel and grate the sweet potato into a bowl and mix it with coconut flour. Add the eggs, spring onions and spices. Stir well.
Pour 2-3 tablespoons of the mixture onto cling film and press it. Put 1 tablespoon of the tofu mixture on top.
Using the foil, shape the croquettes.
Fry the vegetarian sweet potato croquettes in a deep pan in oil until they aquire a golden brown color.
