How to make
Peel the potatoes and grate them coarsely. Put them in cheesecloth and squeeze them to drain out their excess moisture. Chop very finely and add to the grated potatoes.
Add the eggs, flour and salt. Mix.
To make each croquette, put a tablespoon of the mixture in a heated pan with oil and fry on medium heat for 4 minutes on each side until golden.
Serve warm, sprinkled with powdered sugar.
