How to make
Cut the pork into pieces and put them to boil in 2 1/2 cups (600 ml) of water. Once they come to a boil, remove the meat and strain the broth – the foam on its surface needs to be removed. Put the broth back into the pot and add the coarsely chopped carrots, celery, onions, pepper, peeled and sliced potatoes.
Allow the pork to simmer on the stove, and if necessary, add a little hot water. Once it boils for 10 minutes, add salt, garlic cloves if desired and grains of allspice and black pepper. Allow to boil for about 1 hour.
At the very end, add the finely chopped lovage and simmer with the lid on, with the stove off.
