Ingredients

  • red beets - 1 pc. (raw)
  • carrots - 2 pcs.
  • quinoa - 1.7 oz (50 g)
  • pumpkin seeds - 3 tbsp.
  • walnuts - the nuts of 5 walnuts
  • olive oil - 5 tbsp.
  • lemons - the juice from 1 lemon
  • lime - the juice from 1 lime
  • oranges - the juice from 1/2 small orange
  • salt - 1 tsp. (or by taste)

How to make

Boil the quinoa for 12 minutes and strain it and leave it in the strainer to cool.

Clean and peel the root vegetables. Grate them on a coarse grater.

In a bowl, mix the nuts with the grated carrots and beets and add the quinoa.

Prepare a rich citrus dressing from the juices of lemon, orange and lime with olive oil and salt. I like it more sour and that's why I add more juice, but if you prefer a more balanced taste, don't add as much. Add less of it.

Mix the vitamin salad well and serve it with your favorite drink.
