How to make
Boil the quinoa for 12 minutes and strain it and leave it in the strainer to cool.
Clean and peel the root vegetables. Grate them on a coarse grater.
In a bowl, mix the nuts with the grated carrots and beets and add the quinoa.
Prepare a rich citrus dressing from the juices of lemon, orange and lime with olive oil and salt. I like it more sour and that's why I add more juice, but if you prefer a more balanced taste, don't add as much. Add less of it.
Mix the vitamin salad well and serve it with your favorite drink.
The vitamin salad with quinoa and beets is ready.
