How to make
Clean the fish well by removing it's gills, but not the head. Cover a suitable tray with aluminum foil, so that when the fish is placed in it, it can be wrapped up.
Mix the flour and spices and sprinkle the tray with the mixture and the fish will be placed on it. Spread the fish with the beaten egg white and place it on the flour. Sprinkle the rest of the flour on the fish and spread it out, so that it sticks all over it.
Wrap the fish completely with the foil and bake it at 390°F (200 degrees) for 30-40 minutes. Unwrap the fish and bake it until the flour starts to aquire a golden color.
Brush the crust with oil, so that it does not dry out and bake it a little more until it turns the color of caramel. Serve it with a slice of lemon and a warm garnish.
