How to make

Wash and dry the pork loin. With a sharp knife make transverse cuts, without cutting all the way down.

Place the sliced onions, processed cheese and bacon in the cuts.

Chop the fresh herbs and place them in the blender bowl along with the mustard, salt, soy sauce, the pepper spices and olive oil.

Rub the pork with the marinade and wrap it with aluminum foil. Put it in the fridge and leave it overnight.

The next day, transfer the meat into a baking pan, arrange the mushrooms around it and roast it for 50 minutes. Then remove the foil from the tender roasted pork and roast it for another 10 minutes.

Serve the whole roasted piece of pork with bacon and mushrooms with the separated sauce and enjoy.
