Ingredients

  • turkey legs - 2 pcs. (lower legs)
  • green peppers - 2 pcs.
  • onion - 1 onion
  • vermicelli noodles - 1 cup
  • salt
  • black pepper
  • savory herb
  • oil
  • parsley
  • For the thickener
  • yogurt - 6.7 fl oz (200 ml)
  • egg yolk - 1 pc.
  • flour - 1 tbsp.

How to make

First, wash the turkey legs under running water and put them in a pressure cooker. After 45 minutes, take them out and let the meat cool down and do not throw away the broth, because you will use it for the soup.

After the meat cools down, cut it into small cubes, as for soup. Then grab the green peppers, cut them into small cubes and repeat this with the onion.

Put the onions and peppers in another pot with a little oil, fry them and add the broth (which is about 2 liters and is very greasy), bring it to a boil for a while and add the vermicelli noodles and diced meat, then wait for it to boil well.

Once the noodles are ready, add salt, black pepper, savory herb and start preparing the thickener.

Put yogurt, flour and egg yolk in a bowl and mix everything well and add a bit of the soup to it to make the temperature the same and then add the mixture to the soup. When you're done with that, cut the parsley and add it inside and serve the turkey soup warm.
