How to make
Put the peeled apple with the lemon juice and sugar in a blender. Blend them for a few seconds.
It's an option to grate the fruit on a fine grater and then immediately mix it with citrus juice and sugar.
Stir the soda into the yogurt.
Pour the spelt flour with cinnamon and vanilla in a bowl and add the milk, the apple puree with the sugar and coconut oil (with lard it also turns out great, but a refined and odorless one should be used).
Mix everything with a spatula or wooden spoon until a homogeneous mixture is obtained. If it is too thin, add a little flour and if it is very thick - a little yogurt or more grated apple.
Scoop from the dough with a spoon and place the scoops in a baking pan covered with baking paper. Flatten and shape them into round and thin biscuits. They can also be shaped by hand, but the hands must be moistened abundantly so that they do not stick.
Bake the apple biscuits in an oven preheated to 360°F (180°C). They are ready once they are well baked on the edges and smell nice - 15-18 minutes.
The thinner, the more crunchy the biscuits will be. To preserve them, store them in a tightly closed container or box.
