Ingredients

  • tilapia - 1.1 lb (500 g) small
  • sea salt - 1.1 lb (500 g)
  • black pepper - 10 grains
  • allspice - 5 - 6 grains
  • rosemary - a few stalks
  • bay leaf - 2 - 3 leaves
  • onion - 1 small onion
  • wine vinegar - 6.7 fl oz (200 ml)
  • oil - 5 fl oz (150 ml)

How to make

The tilapia fish are cleaned from their entrails, heads, fins and tails and then are washed and dried and cut into fillets.

Arrange the fillets in a suitable container with a lid, sprinkled with plenty of sea salt. If the container is small, the fish fillets are arranged in layers and between each layer the fish is sprinkled with plenty of salt. Sprinkle with the remaining salt on top again, cover the container and refrigerate them for 12 hours.

After this time has elapsed, the tilapia fillets are rinsed off from the salt and dried.

Arrange the tilapia fish fillets tightly in a suitable dish with a lid, placing peppercorns and allspice, bay leaf, fresh rosemary leaves and finely chopped onion between them. If desired, you can add chopped dill or parsley.

Fry the oil lightly and once it cools down, mix it with the vinegar. Add as much salt as you like to the fish marinade and pour it over the tilapia fillets.

Cover the dish and store the fish in the refrigerator to marinate for 24-48 hours.

The marinated tilapia fillets are ready and are a suitable appetizer for any drink.
