How to make
First, activate the yeast with a teaspoon of sugar in a bowl of warm water. Leave it to activate in a warm place for 10 minutes.
Meanwhile, sift the flour. Add the activated yeast to it and sprinkle it with salt. Knead a smooth and soft dough and form it into a ball.
Cover the dough with a towel and leave it to rise in a warm place. When it increases its volume, divide it into 4-5 balls.
Roll out each ball into a crust - not too big and not too thin. In the middle of each put the grated white cheese and yellow cheese.
Carefully close the them up. Roll them out again on both sides.
Line a baking tray with parchment paper and arrange the khachapuri inside. Bake them in a preheated 430°F (220 degree) oven.
After about 15 minutes, take them out and spread them with a beaten egg yolk. Place them back in the oven to bake until they're done.
Spread the warm khachapuri with butter.
