How to make
This extremely warming soup is quick and easy to prepare and is very effective for fighting colds on cold winter days.
It is Spanish style and I have added to it the healthy ginger, which is known for its beneficial effects against the annoying colds.
Chop the cleaned garlic cloves and cut the dried meat into small cubes. I use ham, but you can use any similar meat.
Heat the olive oil over low heat, it is quite a bit, but it needs to be that way. Add the garlic to release its aroma, add the meat cubes and stir for 3-4 minutes or until they're lightly fried.
Add the paprika, stir for 30 seconds (on low heat, so that it does not burn) and pour the broth. Grate about 1 tbsp. of fresh ginger root and season with a pinch of cumin and salt, if necessary (depending on the salinity of the broth).
Boil it for 20 minutes with the lid closed over medium heat.
Add one egg to the boiling aromatic broth and stir it quickly, so that it doesn't lump up. Do the same with the second egg.
Optionally, you can add one or two tablespoons of vinegar to the soup.
Serve the garlic soup very hot and garnish it with toasted slices of bread.
