  • kale - 6.4 oz (180 g)
  • apples - 2 small or 1 large
  • avocado - 1 pc. (well ripened and soft)
  • carrots - 2.1 oz (60 g)
  • red sweet peppers - 3.5 oz (100 g)
  • dried cranberries - 1 oz (30 g)
  • lemon juice - 2 and 2/3 tbsp. (40 ml)
  • soy sauce - 2 tbsp.
  • salt - 1 pinch (optional)
  • apple juice - 1/4 cup (or water)
  • olive oil - 3 tbsp.

How to make

1. From half of the apples and avocado prepare the dressing for this amazing salad.

Peel the fruit, clean them from their seeds and put them in a blender with olive oil, soy sauce, apple juice, lemon juice and very little salt (you can add more at a later stage, if needed).

Blend everything into a smooth puree, which will be used flavor our vegetable salad.

2. Clean and cut into small pieces the remaining of the apple, carrot and pepper - it is important to use a variety of sweet pepper, which will give the necessary contrast of flavors and the apples are best to be sour.

3. The kale leaves are shredded in bulky pieces and the hard and thick fibrous veins in the middle are removed.

Weigh the cleaned leaves without the hard parts. The kale is washed in two or three waters and strained.

4. In a large bowl, mix the apple, carrot and pepper pieces with the kale leaves and dried cranberries.
