"A gorgeous salad with a surprisingly good combination of spinach, strawberries, cashews and cheese. The wheat or quinoa add density and make the salad more filling and even more healthy."

Ingredients

  • baby spinach - 7 oz (200 g) or medium - sized leaves
  • strawberries - 5.3 oz (150 g)
  • wheat - 1 cup peeled (or quinoa)
  • cashews - 2.1 oz (60 g), roasted
  • feta cheese - 7.8 oz (220 g)
  • olive oil - to taste
  • balsamic vinegar - to taste
  • salt - to taste

How to make

Boil the peeled wheat until the grains are soft. Pour them into a large colander and wash them under cold running water. Leave them to cool.

Do the same if you are making the quinoa salad instead of wheat.

Wash the spinach leaves and dry them well. If there are bigger ones, you can shred them.

Clean and cut the strawberries into circles.

Mix all these ingredients in a large bowl and season with salt, good quality olive oil and balsamic vinegar (white or dark).

Add the roasted cashews and mix well.

Divide the spinach salad into portions and add cubes of Feta cheese at the end.

If you use feta, you can mix it with all the other products, but with Danube it is better to add it last because it is softer and creamier.
