How to make
Peel the potatoes and cut them into cubes. Add the grated carrots and onions.
The spinach is finely chopped and also added. Season with salt and black pepper. Leave it to boil.
Just before it is ready, add a handful of rice and let it simmer for another 10 minutes.
During this time, the thickener needs to be prepared. Beat the yolk with the yoghurt and add the flour. A slurry like mixture should be obtained.
Remove the spinach soup from the heat, add some of the juice to the thickener and pour it in and stir constantly.
