How to make
Cut the potatoes to pieces, wash them and cook in salted water. Mix the ground cumin, cayenne pepper, crushed clove of garlic, grated ginger, lemon juice and 2 tablespoons of water in a bowl. In a Teflon pan, melt the butter and olive oil and fry the potatoes in it. Mash them gently with a wooden spatula.
Once braised, remove them and in the same oil, add the spices. Leave on the stove until the liquid evaporates a bit. Then add the chopped spinach and stir for 3 minutes. Add the potatoes, mix for a minute and pour the blend into a greased baking tray.
Grate plenty of cheese and put it to bake for 10 minutes in a preheated oven.
