Ingredients

  • rabbit - 4 lb (1.8 kg), cleaned and chopped
  • dijon mustard - 4 tbsp.
  • butter - 1 oz (30 g)
  • oil - 1 tbsp.
  • onion - 1 medium - sized onion
  • flour - 1 oz (30 g)
  • thyme - 1 tbsp.
  • rosemary - 1 tbsp.
  • black pepper
  • cider - 14.5 fl oz (430 ml)

How to make

Rub the rabbit with the mustard and leave it in a cool place for 2-3 hours so that it can absorb the flavor. Heat the butter and oil in a deep frying pan and add the rabbit meat. Fry it until it turns golden brown and then transfer it into a baking pan.

Pour the chopped onion into the pan and add a little more oil, if necessary. Fry the onion until it turns golden brown, then add the spices and flour. After 1-2 minutes, add the cider.

Stir the sauce and bring it to a boil. Season it with as much salt and black pepper as you like and pour it over the rabbit meat.

Cover the pan and bake it for 45 minutes to 1 hour in a moderately heated oven.
