"If you want lean - its lean, but its also fragrant, spicy and so delicious that you wont want to share it with anyone else"

Ingredients

  • oil - 3 tbsp.
  • onion - 1 medium - sized onion
  • garlic - 2 cloves
  • green peppers - 1 pc.(diced)
  • tomatoes - 2 pcs.
  • hot peppers - 1 pc.
  • lemon juice - 1 tbsp
  • cumin - 1/2 tsp ground
  • salt - 1 tsp.
  • red beans - 14 oz (400 g) canned
  • rice - 8 oz (220 g)

How to make

Pre-boil the rice until it's cooked (in about 3 cups of water for about 30 minutes). Finely chop the onion and garlic.

Heat 2 tablespoons of oil and fry the onion and garlic. Add the chopped peppers (green and hot), tomatoes, lemon juice and cumin.

Stir well, cover with a lid and cook until the vegetables soften. Stir with the red beans. Add the remaining oil and cooked rice.

Stir again, cook for another minute and serve.

The Mexican-style lean rice is ready.
