How to make
Pound the schnitzel with a wooden mallet, preferably though cling film to keep your counter clean. I should be 2-3 millimetres thick. Make narrow cuts on the meat with a knife, but without cutting it all the way.
Drizzle some lemon juice on each piece of veal and season with salt and pepper. Dip the schnitzel in flour (shake off the excess flour), then in egg wash and finally in the breadcrumbs.
Deep fry each side in hot oil for 3 minutes. Place them on a layer of kitchen roll to absorb the excess oil.
Serve with French fries, and a slice of butter on top.
