Ingredients

  • shrimp - 10.5 oz (300 g)
  • wild rice - 3.5 oz (100 g)
  • white wine - 1/2 cup (100 ml)
  • ouzo - 3 1/3 tbsp (50 ml)
  • vegetable stock - 2 cups (500 ml)
  • onions - 1 pc.
  • garlic - 1 clove
  • butter - 100 g
  • olive oil - 3 - 4 tbsp.
  • parmesan cheese - 30 g
  • black pepper

How to make

Remove the heads of the shrimp and place them in a small pot. Add vegetable stock and cook for 10-15 minutes.

Chop the onion finely. Heat a small piece of butter and a little olive oil in a deep pan and saute the onion. Add the wild rice and stir. Season with salt, and keep cooking for a minute. Pour in the white wine and reduce the heat.

Simmer until rice absorbs the wine, and the alcohol evaporates.

Strain the shrimp and vegetable stock. Add it to the rice little by little until the rice is cooked.

In the meanwhile shell and devein the shrimp.

Melt the remaining butter in a pan.

Crush 2-3 cloves of garlic and add them to the hot butter. Saute the shrimp for a few minutes until they turn golder brown. Add the ouzo and keep cooking for 1-2 minutes.

Place the cooked rice in a bowl. Grate the parmesan cheese on top and arrange the cooked shrimp.

Pour the garlic butter from the shrimp pan and serve.
