Clean the shrimp, salt them and let them strain. Heat the oil and put the finely chopped onion in it to fry. Then add carrots, and once softened, add the tomato sauce, salt and pepper.
Allow the sauce to boil for about 10-15 minutes. Add the rice, stir, and top up with 2-3 cups of water. When the rice is nearly cooked, add the shrimp and simmer for about 15 minutes, until the water evaporates.
Transfer the rice with shrimp in a buttered oven dish and bake until the water evaporates.
