Ingredients

  • fresh peas - 1 cup (peeled)
  • tin of corn - 7 oz (200 g)
  • carrots - 3 pcs.
  • potatoes - 4 - 5 pcs.
  • olive oil - 5 tbsp.
  • mustard - 1 tbsp.
  • salt
  • lemon juice - 2 tbsp.
  • parsley - 2 - 3 stalks with leaves + more for decoration

How to make

Peel the potatoes, wash and cut them into circles and boil them in slightly salted water.

When they are ready, strain the water and mash them. Wash the peas. Peel the carrots, wash and cut them into cubes. Put peas and carrots in a saucepan and pour water over them.

Add a pinch of salt. Boil until they're fully cooked and 5 minutes before removing them from the heat, add the corn.

Strain the cooked products from the water with a large strainer and pour them over the mashed potatoes. Add finely chopped parsley, as well and as much salt as you like.

In a separate bowl, mix the mustard, olive oil, a pinch of salt and lemon juice. Beat well and pour the mixture over the potatoes, peas, carrots and corn.

Mix the salad well and serve it decorated with fresh parsley leaves.
