How to make
Cut the onion into thin crescents and mash them in a large bowl with a little salt. Optionally, you can use red onions. Cut the tomatoes and cucumbers into pieces and add them to the onions.
Roast the peppers, peel and cut them into small strips, add them to the salad, next add the olives. Toss the salad, salt it, pour on a dressing of vinegar and olive oil. Crumble the feta cheese over the vegetables, sprinkle with chopped parsley, garnish it with an olive in the middle and serve.
This salad is enough for 3-4 servings.
